I have a great body and great mood.

Many people have the tendency to believe that having a great body has to do with the amount of exercise you do. They tell themselves that if they can just do ten more crunches or ten more minutes on the treadmill that they’ll have the body they want. Little do they realize that they’re actually wearing out their resources by over-exercising. Why is it that it’s so difficult for us to feel energized in a world that is supposedly more advanced every day? I believe this epidemic of putting ourselves down by forcing ourselves to complete physical challenges for the sake of looking great is due to what we were taught in school and at home. So often are we told  by our bosses, parents, and teachers that after we do the work we can have a reward, or in physical terms, if you want to have abs you just have to do more sit ups. It’s not true! It’s not true at all. I have been doing sit ups for years and it took me forever to see results and it wasn’t until dozens of books that I realized how to actually get in great shape while not draining all of my energy and staying in a good mood. The reason why I wasn’t losing weight or toning up was because I was eating garbage. What good was my exercise if I was going to stuff down a burger afterwards? 

The key to having a great body is to eat the right food. Eat balanced foods. There are thousands of programs out there, a few that I have tried, and thousands of books out there on the topic, and dozens I have read but I was actually really excited when I stumbled upon The Paleo Cookbook after my nutritionist pointed it out to me. Now, the reason why she pointed it out to me was because she knew how great it worked and because she knew I loved being on the computer. The Paleo Cookbook is a great reference to learning how to eat right the way nature had intended for us (or the way we used to eat when we lived outdoors.) Instead of loading up on saturated fats, just watch this video and learn more for yourself. Although I highly recommend it, I’m not asking you to buy the book, I’m simply informing you about the Paleo lifestyle so that you can lose cellulite and look good this summer. Go to your library and find some books on the topic, and feel free to ask me questions about it.

Whole-Grain Blueberry Pancakes
Ingredients:
1 cup whole-wheat flour
1 cup unbleached white flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups buttermilk
2 large eggs, lightly whisked
2 1/2 tablespoons unsalted butter melted
2 tablespoons maple syrup
1 1/2 cups of blueberries or other fruit that you may like. Try strawberries or even chocolate chips!
Directions:

In a large bowl, whisk together together all of the dry ingredients. 
Whisk the wet ingredients into the dry slowly and mix until just blended.**HINT: Try not to over mix. Lumps are alright in the batter. Over mixing causes the pancakes to sieze up and become hard.
Heat a griddle or skillet to medium heat. Add a bit of butter to lightly grease the griddle.**HINT: Try using a mix of butter and oil. Butter for flavor and oil for a higher smoking temperature so your butter won’t burn. 
Pour about 1/4 cup of batter into the skillet and sprinkle the blueberries (or other fruit) on top.**HINT: Try not to put too much or you might have a hard time flipping them without making a mess! 
Cook for about 2 1/2 – 3 minutes on each side or until lightly golden brown and cooked through.**HINT: You know that the pancakes are ready to flip when you see bubbles on the surface.
